Pound Cake

About 1 1/2 cups (3/4 lb.) butter or margarine, cut into chunks
About 2 3/4 cups sifted cake flour
3 1/4 cups powdered sugar
6 large eggs
1 teaspoon vanilla

1. Butter and flour a 10-cup plain or decorative tube cake pan.

2. In a bowl, mix 1 1/2 cups butter and the sugar; beat with a mixer at high speed until fluffy, about 8 minutes, scraping bowl occasionally.

3. Add eggs, 1 at a time, beating to blend after each addition.

4. Add 2 3/4 cups flour and the vanilla. Stir to mix, then beat at high speed until well blended. Scrape batter into tube cake pan.

5. Bake at 325 degrees until cake begins to pull from pan sides and springs back when lightly pressed in the center, 1 hour and 10 minutes to 1 hour and 20 minutes. Let cool about 10 minutes. Invert cake onto a plate. Serve warm or cool, cut into thin slices.
